电子舌对冰葡萄酒的区分辨识研究 被引量:7

摘要 应用电子舌对冰葡萄酒样品进行区分辨识,考察电子舌对不同种类冰葡萄酒样品的辨别能力。采用主成分分析法和判别因子分析法对实验数据进行处理。结果表明,在主成分得分图和判别因子图上,各冰葡萄酒样品的落点在各自的区域范围内而互不干扰,说明电子舌能够将各种不同种类和同一种类经橡木桶不同贮藏时间的冰葡萄酒样品很好地区分开。 Electronic tongue was applied for the discrimination of different kinds of ice wine samples. All data were treated by multivariate data processing based on principal component analysis(PCA) and distinguish factor analysis(DFA). The results showed that, the points of each kind of wine fell on its individual district and did not mix with each other on the principal component core chart and the distinguish factor analysis chart,which suggested that electronic tongue was able to identify different kinds of ice wine and wine of the same species but with different storage time by oak barrel.
