摘要
以两系杂交红米稻品种皖稻129为材料,提取糙米中的黑米色素,研究了光照、金属离子、温度和pH值等环境因素对黑米色素稳定性的影响。结果表明,黑米色素在10-80℃的温度环境、pH值4-12的酸碱性环境下以及在溶液中添加0.1-2.0mg/mL的Ca^2+、K^+后均表现较为稳定,但添加0.5 mg/mL以上的Fe^2+、Sn^2+能使其逐渐沉淀,在100℃高温条件和光照条件下表现不稳定。
Using Wandao 129,a two-line hybrid red rice variety,as the materials,the effects of the factors including light,metal ion,temperature and pH value were studied on the stability of black rice pigment extracted from brown rice. The results showed that the black rice pigment had a good stability under the conditions of the temperature between 10℃ - 80℃,pH values between 4 to 12,or addition of 0. 1 - 2. 0 mg /mL of Ca^2 +or K^+to the solution,but light,addition of Fe^2 +or Sn2 +with a concentration over 0. 5 mg /mL or a temperature as high as 100℃resulted in an instability of black rice pigment.
