摘要
在夏季高温环境下,试验了不通风(0 m/s)和以0.02、0.04、0.06、0.08 m/s的粮堆表面风速进行通风的情况下,水分含量分别为14.0%、14.5%和15.5%的小麦在不同时间的微生物活性变化.结果显示:在不通风的情况下,小麦中微生物活性随储藏时间延长而增长,水分含量15.5%的小麦在28 d达到安全储藏活性临界值(500 U).在以粮堆表面风速0.02~0.08 m/s进行通风的情况下,上述小麦中的微生物活性均被显著抑制,且不同风速对小麦的微生物活性抑制结果差异不显著.在夏季高温环境中,高水分小麦以0.02 m/s的粮堆表面风速每天通风6 h可明显抑制其中的微生物活性,在一定时间内实现安全储藏.
In high-temperature summer,the changes on microbial activity of wheat samples with moisture contents of 14.0%,14.5%,and 15.5% were studied at different time points without ventilation and by ventilation at a grainbulk surface wind velocity of 0.02,0.04,0.06 and 0.08 m/s. The results showed that the microbial activity of the wheat samples was enhanced as the storage time prolonged in the case of not ventilation,and the wheat sample with 15.5% moisture content reached the safe storage activity critical value(500 U) in 28 days. When ventilation at the surface wind velocity of 0.02 to 0.08 m/s,the microbial activities of the above wheat samples were inhibited significantly,and the inhibition effect of different wind velocities had not obvious difference. In hot summer,the microbial activity of high-moisture wheat could be inhibited when ventilation at0.02 m/s surface wind velocity for 6 hours every day,which could realize safe storage in a certain period of time.
