摘要
小球藻含有丰富的营养物质,具有多种保健功能,已作为功能食品和营养强化剂应用于食品工业。但由于小球藻的细胞壁十分坚硬,很难破碎,其内的有效成分不易释放,应用价值因此而受到了影响。因此,破壁技术是小球藻产业的关键技术之一。本文对现有的各种破壁技术进行了综述,并在此基础上提出一些自己的想法。
Chlorella contained plentiful nutrients, and it had many healthcare functions. Now chlorella has been applied in food industry as functional food or nutrition fortifier. However, the cell wall of chlorella was very hard so that it was difficult to break, and the activate component in cell was difficult to release. All of these restricted chlorella application. Therefore, the cell-breakage was one of the key technologies in chlorella industry. This paper reviewed various cell-breakage technology of chlorella and gave some own ideas.
