摘要 不饱和脂肪酸凭借其抗炎、抗氧化、抗肥胖等多种生理活性功能在食品工业中得到了广泛关注和应用。小球藻富含不饱和脂肪酸,分布广、易培养、生长快,因此被视为不饱和脂肪酸的重要来源之一。综述了小球藻不饱和脂肪酸的提取工艺及功能活性研究进展,并对其在食品中的应用进行展望,以期为小球藻不饱和脂肪酸的进一步开发利用提供参考。 Unsaturated fatty acids have been gained wide attention and application in the food industry due to their physiological activities such as anti-inflammatory,anti-oxidation and anti-obesity.Chlorella is rich in unsaturated fatty acids,and it is regarded as one of the important sources of unsaturated fatty acids for its wide distribution,easy cultivation and fast growth.The extraction process and functional activities of Chlorella unsaturated fatty acids were summarized and its application in food was prospected so as to provide reference for further development and utilization of Chlorella unsaturated fatty acids.
