摘要 目的调查日照市部分食品中铬含量,为食品安全风险评价提供基础资料与科学依据。方法在日照市辖区内各县、区农贸市场、超市、食堂等进行随机采样,并对食品样品中铬含量进行测定。结果在9类共120份检品中,除猪皮冻与奶糖两类食品存在部分检品含铬量超出限量1.0mg/kg外,其他各类铬含量符合要求,猪皮冻与奶糖两类食品合格率分别为76.19%与62.50%。结论在个别食品中存在以工业明胶代替食用明胶的可能,仍需加强对食品加工企业的监管。 Objective To investigate chromium content in food added with gelatin in Rizhao city.so as to provide the basic information and scientific basis for risk assessment of food safety. Methods Determination and analysis were conducted on chromium content in food by random sampling in food markets,supermarkets,canteens and others in counties and districts of Rizhao city. Results In 120 samples of 9types of food,some samples of pigskin jelly and toffee exceeded the limit of the chromium content 1mg/kg,other types of chromium content of food can be considered to meet the requirements.The qualified rate of two categories of pigskin jelly and toffee was 76.19%and 62.50%respectively. Conclusion It is possible for individual enterprise that edible gelatin may be replaced with industrial gelatin in production process of food,and it is still necessary to strengthen the supervision of food processing enterprises.
