摘要
在饲料的加工过程中,淀粉糊化度是一个重要的指标参数,其直接影响畜禽吸收利用饲料中能量物质的效率,进而影响饲料的转化效率和畜禽生长性能。文章总结了淀粉糊化度的测定方法,包括酶水解法、黏度法、热分析法、近红外光谱分析和脉冲核磁共振等,拟为淀粉糊化度的快速准确的测定方法的建立提供依据。
In the process of feed processing, the degree of starch gelatinization is an important indexes, it affects the utilization efficiency of energy in feed, digestibility coefficients of feed and animal perfor- mance. This paper summarizes different methods on determining the degree of starch gelatinization. These methods include enzyme hydrolysis method, viscosity method, thermoanalysis method, near infra- red reflectance spectroscopy and pulsed nuclear magnetic resonance, and provides references for estab- lishing a rapid and accurate determination method of the degree of starch gelatinization.
