摘要
本文对紫背天葵红色素耐光、耐热、耐氧化及还原稳定性进行了研究,并考察了部分常见食品添加剂及常见金属离子对紫背天葵色素的影响。
This article studies heat and light resistance, anti-oxidation and reductive stability of natural red pigment of Begonia Fimbristipula Hance and explores the effect of some common medallions and food additives on Begonia Fimbristipula Hance pigment.
