摘要
菠菜采后贮藏期间叶片相对含水量减少 ,叶绿素及可溶性蛋白质含量降低 ,保护酶活性在贮藏初期上升 ,以后又下降 ,丙二醛 ,脯氨酸含量及膜透性在后期均呈不同程度的增加。表明 :菠菜叶片失水萎蔫 ,细胞内活性氧代谢异常 ,膜脂过氧化水平提高 ,膜结构遭受破坏 。
During the preservation of spinach, the RWC content, chl and soluable protein content reduce; protective enzyme increases at first, then reduces; MDA, proline content and membrane permeability increase in different levels in the later period. It shows that the loss of water in spinach leaves ,the abnormal metabolism of activate oxygen in cell ,higher lipid peroxidation ,destruction of membrane structure accelerates the senescence of spinach leaves.
