The crystal melting law of corn starch is studied by DSC.It has been discovered that there are two different types of crysalline structures of starch water and starch starch in native starch,and they have different melting law.The two crystalline structures show there are three endothermic peaks on the DSC curves during heating the starch-the gelatinization peak,the starch water crystal melting peak and starch starch crystal melting peak.All of the three peaks have different characters and laws.
