摘要
随着人们对乳酸菌的认识不断深入 ,由它制成的酸乳制品、保健食品广受欢迎 ,面对日益增多的需要检验的含乳酸菌的食品 ,我们目前一般采用国标法 GB/ T16 347- 1996 ,需要 3d时间。本文描述了用电阻抗法快速定量测定食品中的乳酸菌 ,方法简便、快速 ,准确 ,只需要 18h,我们实验室用 32 4份样品做了一条标准曲线 ,相关系数为 0 .95。应用这条标准曲线 ,取 30份样品分别用国标法和仪器法做对照 ,结果经统计学处理 ,二种方法无显著差异 ,表明方法是可行的。
Alongside the people's recognize of lactobacillus in depth,the lactobacillus products and foods of health protection which made of lactobacillus are welcomed widely.Now more and more foods containing lactobacillus need to be tested.It takes 3 days to examine one sample if we adopt national standard GB/T16347-1996.In this thesis we describe a new method which can be used to test lactobacillus existing in foods.This new method was simple,fast and accurate,it only cost 18 hours to test one sample using this method.We drew up a standard line based on the results of 324 samples in our lab,the relation coefficient is 0.95.We tested 30 samples using instrument method compared with national standard method.The results were handled with statistics way,there haven't any outstanding difference between this two methods.That indicated the instrument method is workable.
