摘要 近年来我国食品安全恶性、突发性事件频频发生,不仅给消费者带来了健康风险,更危及了人们的生命安全,也扰乱了国际进出口贸易的稳步流通,造成国民经济损失,严重影响我国国际贸易形象和可信程度。在我国,由于食品中微生物危害导致的食品安全问题呈逐年上升趋势。微生物的危害控制和风险评估,能够帮助政府和企业增强风险防范意识、提高风险管理能力,并依此为依据制定合理的相关食品限量标准,从而提高整体食品安全水平。笔者概述了国内外食品中微生物危害控制和风险评估技术的研究现状,探讨了微生物风险评估相对于其他风险评估的难点,并对微生物定量风险评估未来的发展趋势进行了分析。 In recent years, Chinese food safety vicious and unexpected events occurred frequently. This leads to consumers not only health risk and life safety, but also disrupt the steady flow of international import and export trade, and resulting in the loss of the national economy, seriously affected the image and credibility of the interuational trade in China. In China, food safety problems caused by microbiological hazards in food cause an upward trend. Hazard control and risk assessment of microorganisms that can help governments and enterprises to enhance risk awareness, improve risk management capabilities, and so develop a reasonable food limit criteria, thereby improving the overall level of food safety. This research provide an overview of current research in food control microbiological hazards and risk assessment techniques to explore the microbiological risk assessment relative to other risk assessment difficulties, and quantitative microbiological risk assessment of future trends are analyzed.
