摘要
本文阐述了食品生产中清洗的概念、对象、目的和意义 ,介绍了食品清洗的原理、应用及进展情况 ,对清洗中消毒杀菌的作用、方法及清洗设备也作了相应的介绍 。
This paper introduces the concept, object, aims and function of cleaning in food production, and introduces the principle, applying and development, and in the same time, introduces the action method and cleaning facilities of sterilization in the cleaning progress, sepecially put forward some existing problems and solution ways.
