脉冲强光及紫外线对水蜜桃多酚氧化酶活性的影响 被引量:14

摘要 本文研究了脉冲强光及短波紫外线照射对水蜜桃多酚氧化酶活性的影响。结果表明,随着脉冲强度、脉冲次数的增加,以及短波紫外线照射距离缩短和照射时间的延长,水蜜桃多酚氧化酶活性损失越大,且达到相同钝酶效果时,脉冲强光处理所需时间远远短于短波紫外线照射。同时,水蜜桃多酚氧化酶所处的pH值环境会影响脉冲强光及短波紫外线照射对其钝化效果,pH值4.2时钝酶效果明显优于pH值6.8时的钝酶效果。与缓冲体系相比,水蜜桃果汁中多酚氧化酶更难被脉冲强光及短波紫外线照射钝化。 The effects of pulsed light and uhraviolet-C irradiation on the activity of polyphenol oxidase from honey peach were studied in this paper. The results showed that with the increasing of the pulsed intensity and pulsed times, polyphenol oxidase was gradually inactivated. The similar results were obtained with the decreasing of uhraviolet-C irradiation distance and increasing of irradiation time. To obtain the similar inactivation effect of enzyme activity, the time required by pulsed light treatment is much shorter than that of ultraviolet-C irradiation. The pH would affect inactivation of enzyme activity of pulsed light and uhraviolet-C irradiation. The result showed that the inactivation effect at pH 4.2 was much stranger than that at pH 6.8. Compared with the buffer system, the inactivation of polyphenol oxidase in peach juice was more difficult.
