摘要
研究以大豆分离蛋白为壁材,麦芽糊精为填充剂,采用喷雾干燥法制备生产茶油微胶囊的生产工艺.以包埋率为评价指标,通过正交试验,确定了制备茶油微胶囊的工艺参数为:30 MPa,均质时间10 min,大豆蛋白与麦芽糊精比例为1∶1,芯材与壁材之比为0.7∶2,进风温度170℃,固形物含量为18%,进料流量为21 mL/min.在此条件下,茶油微胶囊的包埋率为89.97%.
Using soybean protein isolate(SPI)as the wall material and maltodextrin as bulking agent,the paper studied the production process of camellia seed oil microcapsule by spray drying. Taking embedding rate as evaluation index, the paper determined the optimum process parameters through orthogonal experiments, pressure 30 MPa,homogenization time 10 minutes,the ratio of SPI to maltodextrin 1 ∶1,the ratio of core material to wall material 0.7 ∶2,inlet air temperature 170 ℃,solid content 18% and feed flow rate 21 mL/min. Under the optimum conditions,the embedding rate of camellia seed oil microcapsule reached 89.97%.
