梅花鹿胎盘多肽辐照杀菌工艺的研究

摘要 梅花鹿胎盘多肽具有丰富的营养价值,抗氧化性能好。以酶解获得的梅花鹿胎盘多肽为原料,进行辐照杀菌处理,比较不同剂量处理后梅花鹿胎盘多肽的杀菌效果。结果表明:在辐照剂量为7 kGy时,梅花鹿胎盘多肽中细菌总数为45 cfu/mL,大肠杆菌MPN(最大可能数)<3。该剂量辐照后的样品,羟基自由基的清除率降低了4.8%,超氧自由基的清除率降低了12.3%,DPPH自由基的清除率降低了20.6%。这说明,利用7 kGy辐照剂量杀菌后的梅花鹿胎盘多肽,既达到了商业无菌的标准,又有效地保持了产品的生物活性。 Deer placenta polypeptide has rich nutritional value and good oxidation resistance. In this experiment, the deer placenta polypeptide by enzymatic hydrolysis was used as material, and sterilization effects on it were compared with different dose treatments after irradiation sterilization. The results show that: when the irradiation dose is 7 kGy, the total of bacteria is 45 cfu/mL and Escherichia coli MPN (most probable number) is less than 3 in deer placenta polypeptide. Under this condition, hydroxyl radical, superoxide free radical and DPPH radical scavenging rate respectively decreased by 4.8%, 12.3% and 20.6%. The study indicates that the deer placenta polypeptide sterilized with 7 kGy irradiation, can not only achieve the commercial non-bacterial standard but also effectively retain the production's biological activity.
