摘要
通过对4个水稻品种的直链淀粉含量、蛋白质含量、RVA特性及食味值的测定,研究了不同年份、异地栽培和不同贮藏时间对稻米主要品质性状的影响。结果表明:在不同种植年份,仅蛋白质含量在年度间差异显著;异地栽培的稻米其RVA特征值中除最终黏度外的其他4个指标及食味值表现出显著或极显著差异;稻米贮藏后,蛋白质含量和直链淀粉含量无明显变化,食味变劣,最高黏度和崩解值上升。
Amylose content, protein content, the RVA characteristics and palatability value of four rice varieties were analyzed. The effect on grain quality of planting in different years, offsite cultivation and different storage time were analyzed. The results show that protein content in the inter-annual have significantly different in the different year, the other four indicators of RVA characteristic value except the final viscosity and palatability value have significantly different in offsite cultivation. No obvious changes in amylose content and protein content were found after storage. The palatability value of stored rice were lower than those of new rice. The peak viscosity and breakdown values were higher than those of new rice.
