摘要
探讨中国热带水果菠萝蜜的抗氧化活性,采用DPPH法、ABTS法及水杨酸法3种方法研究了菠萝蜜果皮、果肉、种皮、种子4个不同部位乙醇提取物的抗氧化活性,以抑制率和半抑制率IC50评价。研究结果显示,菠萝蜜各部位对DPPH·,ABTS·,·OH均有一定的清除作用,其清除力大小表现为:果皮>种皮>果肉>种子;可知,菠萝蜜果皮、果肉、种子、种皮具有一定的抗氧化活性,可以作为一种良好的天然抗氧化剂物质来源。
The study was aimed to discuss the antioxidant activities in jackfruit which is specially grown in the tropical areas of China. The peel, pulp, testa and seed were separated and exacted by ethanol extract. The antioxidant activity was confirmed through measuring the scavenging capacity of each component in the peel, pulp, testa and seed of jackfruit to DPPH-, ABTS.~, and OH.. The extracts in peel, pulp, testa and seed of jackfruit had strong scavenging capacity. The antioxidant activities in peel was the highest in the four parts, followed by testa, pulp and seed. The peel, pulp, testa and seed of jackfruit had some antioxidant activities, which could be used as a good natural antioxidant activity material.
