摘要
100多年来,《米其林红色指南》以超脱淡然的坚持性与独立性,以谦虚严谨的耐心与毅力将自己打造成了美食界的"奥斯卡",成为世界的美食圣经。中国作为世界上的饮食大国,拥有与法餐媲美的中餐,应该有自己的美食指南,建立中餐的评价标准,并用这套评价标准去影响全球对中餐的认识;在全球化餐饮格局的今天,应以更加广阔和前瞻的视野、兼收并蓄的包容态度思考中国真正的"米其林"。
During its 100 plus years, Le Guide Michelin, unconventionally graceful, humble and precise, has established itself as Oscar in gourmet, bible of world cuisine, with its persistence and independence, patience and perseverance. China, with distinct and diversified cuisines, some comparable to French cuisine, should also own a gourmet guide of her own. Evaluation criteria should be set and adopted by the rest of world for ap- preciating Chinese cuisine. Today, with globalized setup of catering enterprises formed, we might give consid-eration to Chinese Michelin with a broader horizon and ready to assimilate and look forward.
