微波技术在针形绿名茶加工中的应用研究 被引量:8

摘要 杀青和干燥是针形绿名茶加工中的关键工序,将微波技术应用于茶叶杀青和干燥有利于提高其品质。为了提高针形绿名茶品质,本文对比研究了微波杀青、滚筒杀青、汽-热组合杀青和汽-热-微波组合等4种杀青方式、微波干燥和传统烘干等2种干燥方式、以及微波和常规2种加工工艺对针形绿名茶品质(感官品质和内含成分)的影响。结果表明:从杀青方式来看,以汽-热-微波组合杀青效果最好,微波杀青比其它3种杀青方式更有利于提高针形绿名茶外形色泽和叶底,会有损于其香气和滋味,但微波与汽-热组合后杀青能提升针形绿名茶的感官品质;咖啡碱、茶多酚、氨基酸、维C和叶绿素等主要内含成份保留量以微波杀青针形绿名茶为最高。从干燥方式来看,微波干燥比常规干燥更有利于改善针形绿名茶外形色泽、汤色和叶底,但有损于其香气和滋味,咖啡碱、茶多酚、氨基酸、维C和水浸出物等主要内含成分含量均以微波干燥针形绿名茶为最高。从加工工艺来看,采用微波加工工艺更有利于改善针形绿名外形色泽、滋味和叶底,但有损于其香气和汤色;微波加工工艺针形绿名茶中的茶多酚、咖啡碱、氨基酸总量、碳水化合物和水浸出物含量均明显高于对照常规加工工艺针形绿名茶。因而,本研究结果表明应用微波技术加工针形绿名茶能明显提高其商品价值和饮用品质。 Fixation and drying is the critical process of the straight famous green tea processes, fLxation and drying tea by using microwave technology can improve its quality. In order to improve the Straight Famous green tea quality, the 4 kinds fixation methods of microwave fixa- tion, cylinder roller tlxation, steam heat fixation and steam heat microwave fixation, 2 kinds drying methods of microwave drying and conven- tional drying, 2 kinds process technology flow of microwave processing and general processing is used to comparing study the effects of needle shaped famous green tea quality (sense quality and components) in this paper. The results show that as flow: from the fixation methods com- paring, steam heat microwave fixation tea sensory evaluation had the best fixation effect, microwave fixation can improve the shape color and infused leaf quality than other 3 kinds of fixation methods, and may damage the straight famous green tea aroma and taste quality, but the mi- crowave combined with steam heat fixation can promote sense quality of straight famous green tea. The main component content of theine, polyphcnols, amino acid, Vc and chlorophyll in microwave fixation straight famous green tea is the highest content in all fixation g^en tea. From the way of drying comparing, microwave drying is more propitious to the straight famous g^en tea sensory quality, that can improve the shape color, liquid colour and infused leaf quality of straight famous green tea than conventional drying, but it may damage the aroma and taste of straight famous green tea, the main content of theine, polyphanols, amino acid, Vc and water extracts in microwave drying straight famous gtecn tea is higher than conventional drying green tea. From the flow of process technology comparing, using microwave process technology has more superiority to the straight famous green tea sensory quality, that can improve the shape color, taste and infused leaf quali- ty of straight famous green tea than traditional processing technology, but it is
