摘要
比较了南美白对虾、三疣梭子蟹和克氏原鳌虾壳中虾红素乙醇提取液的紫外可见光谱特征,并对微波萃取、超声辅助提取和常规水浴提取虾红素的提取效果进行了比较。结果表明:来源于南美白对虾、三疣梭子蟹和克氏原鳌虾壳的虾红素在473 nm均有特征吸收,而且超声辅助提取效果好于常规水浴法和微波萃取方法。虾红素提取液在-20℃保藏65 h后的稳定性好于室温和-4℃保藏法,而且虾红素提取液能够耐受80~100℃加热15~30 min处理,在pH<5条件下,虾红素提取液的稳定性高。
In this paper, the characteristics of ultraviolet visible spectroscopy of ethanol extraction of shrimp red pigment from white-leg shrimp shell, portunustrituberculatus shell and crayfish shell were analyzed respectively. In addition, the extracting methods of microwave-assisted extraction, ultrasonic-assisted extraction and conventional water bath extraction on shrimp red pigment were compared. Results showed that all the shrimp red pigment from white-leg shrimp shell, portunustrituberculatus shell and crayfish shell displayed characteristic absorption at 473 nm respectively. Moreover, the method of ultrasonic-assisted extraction on shrimp red pigment was better than those of microwave-assisted extraction and conventional water bath extrac- tion. The stability of shrimp red pigment kept stable after stored at -20 ~C for 65 h, better than those stored at room or -4 ~C. Additionally, the extraction of shrimp red pigment could endure the heated treatments ranged from 80 to 100 ~C for 15 to 30 min. The stability of shrimp red pigment was high at pH below 5.
