摘要
以菜籽油和辛酸为原料,选择性脂肪酶催化合成富含中链脂肪酸结构脂(MLM)产品。研究表明,MLM型结构脂辛酸(C8∶0)含量为21.6%时,与原料油脂比较,氧化稳定性指数(OSI值)减少1.3 h,抗氧化能力下降20%。与原料油脂比较,MLM型结构脂增加了分子蒸馏精制过程,抗氧化剂维生素E含量显著减少。与市售结构脂比较,MLM型结构脂产品维生素E含量低63.5%,OSI值也相应低1.3 h。
The medium chain fatty acid structured lipid(MLM) was synthesized by selectivity lipase as catalyst,rapeseed oil and octanoic acid as raw material.The result showed that compared with the raw oil,when the content of octanoic acid(C8:0) in the MLM structured lipid reached to 21.6%,oxidative stability index(OSI) dropped 1.3 h and the antioxidant capacity decreased 20%;MLM-type structured lipid production technology increased enzymatic reactions and the refining process of molecular distillation,and the content of antioxidant vitamin E was reduced notablely.In addition,the vitamin E content of MLM structure lipid was 63.5% lower than structured lipid products bought from market,and OSI values lower 1.3 h.
