摘要
以‘金冠’苹果果实为试材,去果皮,去果心,切取月牙形果块,以超纯水为提取液,进行破碎手段、提取温度、浸提时间及存贮方式的研究,检测样品中可溶性糖的组成与含量。结果表明:人工研磨与机械匀浆都是破碎处理的有效手段,0℃与25℃超声波提取效果相当,提取15、30、60 min对检测结果没有显著影响,光照对检测结果几乎没有影响;温度是影响样品存贮的主要因素,其变化会影响样品中可溶性糖含量;样品处理后最好立即上机检测,如不能及时检测,低温冻藏是比较理想的存贮办法。‘金冠’苹果主要含有果糖、葡萄糖及蔗糖,葡萄糖与蔗糖含量较低且二者相近,果糖含量最高,比前两种糖量之和还多。‘金冠’苹果果实间可溶糖含量差异较大,试验设计时应注意试材的选取。
With ‘Golden Delicious' apples as test materials,the peel removed,the fruit cored,then cut cres-cent-shaped, the fruit pieces then mixed with ultrapure water, extraction of juice is by crushing. Means of ex-traction, temperature, extraction time and storage methods were researched, testing of samples was for soluble sugar composition and content. The results showed that:artificial abrasive and mechanical homogenization are an effective means of crushing,temperatures effective with extraction times of 15 min,30 ranged between 0 ℃ and 25 ℃ ,ultrasonic extraction was quite min and 60 min of the test ,results were not significantly affect-ed. Temperature is the main factor affecting the sample storage,with the changes affecting the soluble sugar content in the sample, the sample is best detected immediately after treatment on the chromatography ma-chine, if not possible to be detected immediately, low temperature frozen storage is an ideal way to store until an appropriate time is available. 'Golden Delicious apples mainly contain fructose, glucose and sucrose ,glu-cose and sucrose content is low and the content levels are similar,fructose content was much higher than both the glucose and sucrose. ‘Golden Delicious'apples showed large differences between fruits in the soluble sugar content, therefore in experimental design one should pay attention to the selection of test materials.
