摘要
根据食品中亚硝酸盐与硝酸盐的测定方法(GB 5009.33-2010)中第二法,通过改变蛋白质沉淀剂的使用量对亚硝酸盐含量测定进行研究。研究表明:蛋白质沉淀剂的使用量对亚硝酸盐测定有一定的影响,蛋白质澄清剂加入量少于GB 5009.33—2010方法中加入量时,回收率随着加入量的增加而提高;当加入量为1倍时,回收率为98.4%,达到最大值;当蛋白质澄清剂加入量超过1倍时,回收率明显下降。
Detection of nitrite content by changing dosage of protein precipitators was studied according to method 2 of detection of Nitrite and Nitrate in Foods ( GB 5009.33 - 2010). It was showed that the dosage of protein precipitators had certain influence on detection of Nitrite content and the recovery was increased with the increase of dosage of protein precipitators when it was less than the regulated dosage in GB 5009.33 - 2010. The recovery reached to its maximum of 98.4% when dosage was equal to that. However, the recovery was decreased obviously when the dosage was more than the regulated amount.
