摘要
利用原子吸收光度法和原子荧光光谱法对18种食用菌中铅、砷的含量进行检测并统计其集中趋势,计算北京市居民常用食用菌中铅、砷的平均摄入量并对其健康风险进行评估。结果表明:食用菌铅、砷含量范围、算术均值和置信区间以干重计分别为0.003~1.564、0.595、0.549~0.641mg/kg;未检出~2.221、0.132、0.113~0.154mg/kg,样品中砷含量卫生标准的综合超标率为3.3%;根据实验结果,计算出北京市居民食用菌铅、砷的人均摄入量为1.67~1.83、0.323~0.440μg/d,其中铅、砷含量在北京市居民膳食摄入可耐受范围内。
Lead and arsenic concentrations in the fruit bodies of 18 edible fungi obtained from various local markets were determined by atomic absorption and atomic fluorescence spectroscopy, and the data subjected to central tendency analysis. Lead levels ranged from 0. 003-1. 564 mg/kg dry weight of fungal tissue, with an arithmetic mean and confidence interval of 0. 595 mg/kg and 0. 549-0. 641 mg/kg, respectively. Arsenic levels ranged from undetectable to 2. 221 mg/kg dry weight of fungal tissue, with a geometric mean and confidence interval of 0. 132 mg/kg and 0. 113-0. 154 mg/kg, respectively. Based on these data, the average daily intake of lead and arsenic from mushrooms by Beijing residents amounted to 0. 167-0. 183 μg/d and 0.323-0.440 μg/d respectively, which alone would not constitute a health risk to the capital's mushroom- consuming residents.
