Status of microbial contamination in food in Jinchengjiang District of Hechi City in 2011

摘要 目的全面了解河池市金城江区食品卫生质量状况。方法随机抽取开放性农贸市场和零售摊点、超市、专卖店五大类100份食品,按照国家标准《食品微生物学检验》提供的方法进行检测,并按照国家标准进行结果判定,对检测结果进行统计学分析。结果 100件检测样品中,细菌总数合格61件,合格率61.0%;大肠菌群合格89件,合格率为89.0%,食品受微生物污染的程度依次是:肉及肉制品>冷饮>调料>糕点>酱腌类。其中酱料类合格率最高,为90.0%;肉及肉制品合格率最低,为44.9%。超标样品中以细菌总数超标最多,占不合格数的39.0%。结论该区肉及肉制品细菌总数和大肠菌群检出率较高,仍是食品中常见的污染菌。目前该区食品卫生情况不容忽视,受微生物影响较为严重,应加强监督与指导。 [Objective]To understand the status of food hygiene quality in Jinchengjiang District of Hechi City.[Methods]100 samples of 5 kinds of food were randomly collected from farmers' markets,retail outlets,supermarkets and speciality shops.The detection was conducted according to the Microbiological Examination for Food Hygiene of Specimens,the results were judged based on the national standards,and the data were analyzed statistically.[Results]Among 100 samples,61 were qualified for total bacterial count with the qualified rate of 61.0%,and 89 were qualified for Coliform group with the qualified rate of 89.0%.The contamination degree of pathogens in food was in sequence of meat and meat products cold drinks condiment pastry sauce pickled foods.The qualified rate of condiment was the highest(90.0%),and that of meat and meat products was the lowest(44.9%).Most of samples exceeded the standard in total bacterial count,which accounted for 39.0% of total unqualified samples.[Conclusion]The detection rates of total bacterial count and Coliform group in meat and meat products are highest in Jinchengjiang District,which are the common pathogens in food.At present,the status of food hygiene in Jinchengjiang District can not be ignored,the microbial contamination is serious,and the supervision and guidance should be strengthened.
