临沂市食品理化与微生物卫生指标状况趋势研究 被引量:3

摘要 目的:分析临沂市2002-2006年度不同种类的食品卫生指标;研究其卫生状况趋势。方法:采用多样本率2χ检验和2χ分割两两比较的方法对不同年度、不同种类的食品样品检测结果进行分析。结果:2002-2006年理化指标合格率为95.0%,微生物指标合格率为87.9%;总合格率为87.2%;送检样品合格率为94.1%,抽检样品合格率为81.7%,委托样品合格率为86.9%;糖果糕点类89.7%,罐头类96.6%,酒类90.5%,保健品类91.8%,乳制品84.0%,肉制品65.6%,豆制品75.5%,调味品99.3%,冷冻饮品78.8%,速冻食品83.0%,食品添加剂88.4%,饮料88.1%,水(包括纯净水、天然饮用水、矿泉水)89.6%。结论:各类食品微生物指标的合格率明显低于理化指标的合格率。不同年度食品样品合格率有显著性差异;不同种类的食品样品合格率有显著性差异;抽检样品合格率较低;肉制品、豆制品、奶制品合格率较低。2002-2006年食品样品检测合格率有逐年提高的趋势,建议卫生监督等部门继续加大监督执法力度,使广大消费者吃上更加卫生、安全的食品。 Objective :To study the hygiene indexes of different kinds of foods from 2002 to 2006 and the trend of their physico -chemical and microbe hygiene indexes in Linyi. Methods:Chi -square test was employed to analyze the analysis results of different kinds of foods in different years. Results:The qualified rate of physico - chemical indexes from 2002 to 2006 was 95.0%, for microbe indexes was 87.9%. The total qualified rate was 87. 2%, which of the giving samples was 94. 1%, which of the sampiing samples was 81.7%, which of the entrusting samples was 81.7%, which of the candy was 89. 7% ,which of the tinned food 96. 6% ,which of wine was 90. 5% ,which of the health - care food was 91.8% ,which of the dairy products 84. 0% ,which of the meat products was 65. 6% ,which of the bean products was 75. 5% ,which of the seasoning was 99. 3% ,which of the refrigeration drinking was 78. 8% ,which of the speed refrigerated food was 83.0% ,which of the food additives was 88.4% ,which of beverage was 88. 1%, which of water was 89. 6%. Conclusion: The qualified rate of microbe indexes is lower than that of physico - chemical indexes obviously. There is notable differences between different food samples and there is notable differences between food in different years. The qualified rate of the sampling samples is lower and the qualified rates of the dairy products, the meat products and the bean products are lower. The qualified rate is increasing year by year from 2002 to 2006. It is suggested that the sanitary supervision department should strengthen supervision and execute the law to make the vast consumers to have the safer foods.
