摘要 目的 :观察三种食品添加剂对植物油的抗氧化作用。方法 :采用菜油及芝麻油为样品 ,空白对照组不加任何添加剂 ;实验组按国家标准最大使用量加入没食子酸丙酯、茶多酚、双乙酸钠。于 37℃恒温 30天 ,以酸价及过氧化值判断其抗氧化作用。结果与结论 :没食子酸丙酯、茶多酚、双乙酸钠均有防止植物油过氧化值升高的作用。没食子酸丙酯、茶多酚有防止植物油酸价升高的作用。双乙酸钠有防止菜油酸价升高的作用 。 Objective:To observe the antioxidation action of three kinds of foodstuff additives for vegetable oil.Methods:Rapeseed oil and sesame oil were taken as samples. In the experiment samples maximal amount of propyl gallate, tea polyphenol and sodium diacetate were added according to the National Criteria, and in the control samples no any additives were added. All the samples were kept at 37℃ for 30days and the antioxidation action was judged by the acid values and peroxide values.Results and Conclusion:The results showed that propyle gallate, tea polyphenol and sodium diacetate all can prevent the rise of the peroxide value of vegetable oils; that propyl gallate and tea polyphenol also can prevent the rise of acid values of the oils tested; and that sodium diacetate can prevent the rise of acid value of rapeseed oil but not significant for that of sesame oil.
