摘要
为了生产优质的山东工夫红茶,本文选择山东现有主栽的黄山种、鸠坑种、祁门种以及福鼎大白茶的有性后代和变异株大白紫芽为材料,对鲜叶进行生化成分、氧化酶活性测定和红茶产品感官审评,结果表明:福鼎大白茶树品种是最适合加工山东夏季工夫红茶的品种,祁门种次之。
In order to process high-quality Congou black tea of Shandong, the main tea cuhivars in Shandong, Huangshanzhong, Jiukenzhong, Qimenzhong, Fuding Dabaieha and Dabai-purple bud were used to screen the suitable tea cultivars. The biochemical compounds and the activity of oxidase in tea fresh leaves / their black tea products were analyzed, and the quality of black tea was evaluated by the sensory method . The results indicated that Fuding Dabai was the most suitable cuhivar for processing Congou black tea of Shandong in summer, next was Qimenzhong.
