摘要
榨菜是中国的名优酱腌菜,尤以涪陵榨菜为佳。本文简述了榨菜的起源、存在的问题。通过分析研究认为:榨菜种植规模化、产业化,传承创新榨菜加工工艺,推进传统食品工业化,是推动榨菜产业快速发展重要路径。
Zhacai is a famous pickles in China, and the one, originate in Fuling is the best. This paper describes the original and status of Zhacai, and thinks that planting on a large scale, industrialization, traditional processing is a valid path to promote zhacai industry.
