摘要
耐盐酵母在高盐环境中具有良好的生长和代谢的能力,对酱油的风味和质量有着重要的促进作用。该文综述了耐盐酵母在酱油中的应用,并对酵母在高盐环境下的调控方式、信号传递途经以及分子应答机制进行介绍。
Salt-tolerant yeast can actively grow and metabolize under NaCl stress.The flavor of soy sauce can be improved by adding salt-tolerant yeast into mash in the later period of fermentation.This review summarized the application of salt-tolerant yeast in soy sauce manufacture.The controlling mode,signal transduction pathway and molecular responses of yeast to salt stress were also introduced.
