天然红叶甜菜红色素属花青类化合物,对光、热等均不稳定。本文介绍了三种试剂作为稳定剂,实验表明。
The natural red beet pigment is a kind of athocyanin compound.It is unstable to light and heat.Three edible agents were used as stabilizers which showed good effect.
