摘要
通过试验分析了大豆油检测时环境温度、存放条件和称量后放置时间对过氧化值的影响,结果表明:高温、光照及暴露于空气中都将使过氧化值增加。同时,对检测过程中其他需注意的细节进行了探讨。
The influencing factors, such as the environmental temperature, storage condition and standing time after weighing were analyzed. It showed that high temperature, beaming and exposed in the air could increase the peroxide value of soybean oil. In the meantime, other details in detection were discussed.
