New Method for Detecting Microorganisms in Food Progress

摘要 食品微生物是影响食品安全的重要因素,由食源性致病菌引起的病例越来越多。但致病菌往往共存于复杂的生物体系中,且数量极少、致病性高,因此,微生物检测方法要有高灵敏度、特异性以及较短的分析时间,现有的成熟检测技术尚难以实现对微生物进行实时、准确、快速的检测,因而许多新的检测方法已成为研究的热点。从微生物检测的角度出发,对逆转录聚合酶链式反应、叠氮溴化乙锭聚合酶链式反应、可视化基因芯片、荧光标记噬菌体等近年来出现的新型检测技术进行论述,并分析各自的优缺点。 Food microbiology is an important factor affecting food safety,foodborne pathogens caused by the increasing number of cases.However,pathogens often coexist in complex biological systems,and few in number,high pathogenicity,therefore,microbial detection methods have high sensitivity and specificity and short analysis time,but our existing detection methods had been difficult microorganisms to achieve real-time,accurate,rapid detection,so many new detection methods had become a research hotspot.The significance of this departure from the microbial detection of RT-PCR,EMA-PCR,gene chip visualization,detection of fluorescent phage and other new technologies were discussed,and analyzes their advantages and disadvantages.
