摘要
简要阐述了双孢蘑菇采后的生理生化变化和影响贮藏保鲜的因素,重点概述了双孢蘑菇贮藏保鲜技术的研究现状,指出存在的问题并初步提出双孢蘑菇的高氧气调贮藏方式。
Physiological changes of post-harvest mushroom was discussed,the fresh-keeping techniques were overviewed,the problems were pointed out,and high oxygen storage method was proposed.
