摘要
对藻类功能食品的研究和开发现状作综述报道。涉及的主要内容有：作为功能食品物质基础的食物纤维、ＰＵＦＡ、维生素、矿物质和微量元素、氨基酸以及其它有生理活性的物质。
Functional Food is development trend of food in the world.There are manykinds of algae in the ocean and inland waters. Algaes are the original producer oforganic compounds and natural accumulator of inorganic compounds, especiallythey contain many substances which are nutrient and highly biologically active.This summary reports material bases and the present situation of research inalgae functional foods including edible fibre,PUFA,vitamins, mineral and traceelements,amino acids and other active substances.
