摘要
天然食品防腐剂壳聚糖具有易于生物降解、抗菌性强、安全无毒等优点。近年来,壳聚糖复合涂膜保鲜技术已成为保鲜领域的研究热点。笔者从壳聚糖与其他天然防腐剂的复合及改性壳聚糖在果蔬保鲜中的应用等方面,对国内外有关壳聚糖复合物保鲜应用的研究进行了综述,提出了现阶段壳聚糖复合物保鲜技术研究与应用中存在的问题及其今后的研究发展方向。
Chitosan is safe and non-toxic to people,which has the advantages of biodegradability and strong antimicrobial activity as a natural food preservative.In recent years,the technology of chitosan coating has become a research focus on storage of fruits and vegetables.In this paper,the studies on application of chitosan in fresh-keeping of fruits and vegetables at home and abroad were reviewed.Moreover,the existing problems and development trends were proposed.
