无溶剂催化体系酶法合成低热结构脂的研究

Synthesis of reduced calorie structured lipid in a solvent-free system

摘要 采用无溶剂体系,以三丁酸甘油酯及硬脂酸甲酯为原料,1,3-专一性脂肪酶Lipozyme RM IM为催化剂,研究了含短、长碳链脂肪酸的低热结构脂的酶法合成。探讨了反应器种类等单因素对反应体系的影响。结果表明:在减压旋转蒸发反应器中,在三丁酸甘油酯与硬脂酸甲酯摩尔比1∶2,反应温度60℃,反应时间6.0 h,加酶量10%时,产物中SSL、LLS、LLL含量分别为54.15%、42.10%和5.16%。 A mixture of low - calorie triacylglycerols including both short and long carbon chain fatty acids was synthesised by taking tributyrin and methyl stearate as Lipozyme RMIM as a catalyst. Effects of different reactors substrates and taking 1, 3 - directional lipase and influence factors were discussed. When the molar ratio of tributyrin to methyl stearate was 1: 2, reaction temperature was 60℃, reaction time was 6.0 h, enzyme load was 10% (by substrate weight), and the reaction was performed in a pressure rota- ting evaporation reactor, the amounts of SSL, LLS and LLL in the product were 54. 15%, 42. 10% and 5. 16%, respectively.
