摘要
将蛋黄磷脂酸胆碱(PC)制成的脂质体用于类胡萝卜素抑制脂质过氧化研究,β-胡萝卜素抑制TBARS积累没有诱导期。当存在于脂质体膜上时,类胡萝卜素抑制脂质过氧化能力的顺序如下:鸡油菌黄质>叶黄素≈β-胡萝卜素>胭脂树橙。类胡萝卜素在水分散液中存在时,抑制脂质过氧化能力按胭脂树橙>叶黄素>鸡油菌黄质>β-胡萝卜素顺序递减。结果表明,类胡萝卜素抑制脂质过氧化与其作用的介质环境密切相关。
Egg yolk phosphatidylcholine liposopoes were used for studying the inhibition of llpid peroxidation by carotenolds. β-carotene suppressed the accumulation of TBARS Without clear induction period. When located in liposomal membrane, ability of carotenoids to inhibit lipid peroxidation was follows as: canthaxanthin> lutein≈β-carotene> bixin.In the presence of carotenoids in aqueous dispersion the antioxidant potency of carotenoids against lipid peroxidation decreased in the order of bixin > lutein> canthaxanthin >β-carotene.The result showed that the antioxidant activities of carotenoids against lipid peroxidation were associated with the microenvironment of their action.
