不同保鲜膜包装对“玉露”水蜜桃保鲜效果的影响 被引量:16

Effect of Different Film Packaging on Quality of "Yulu" Juicy Peaches during Cold Storage

摘要 以奉化"玉露"水蜜桃为试材,在研究0.05 mm厚PE防雾保鲜膜(SY)、0.02 mm厚PE保鲜膜(PE)和微孔保鲜膜(W)包装内O2和CO2浓度变化的基础上,研究了三种不同保鲜膜包装对"玉露"水蜜桃保鲜效果的影响。结果表明,三种保鲜膜的通透性存在差异,透气性SY<PE<W,SY在保水性方面优于其他两种膜。在(1±0.5)℃冷藏条件下,与对照(无包装)相比,三种保鲜膜包装均可以显著减少贮藏期间水蜜桃的水分损失,抑制果实的呼吸强度,延缓硬度及可溶固形物(TSS)含量的降低速率,可延长水蜜桃贮藏期至35 d;综合新鲜度、风味及组织状态等感官品质因素,其保鲜效果以0.05 mm PE防雾保鲜膜最好,其次是0.02 mm PE保鲜膜,再次是微孔保鲜膜。 "Yulu" juicy peaches which were picked in Fenghua city were used as the material,the effects of different film packaging on quality of "Yulu" juicy peaches during cold storage was studied.The results showed that,the permeability of the three films was different,W film was the best,SY film was the last,the water retention property of SY film was better than the other two filmes,the juicy peaches which were packed with the three film respectively and stored at(1±0.5) ℃ could keep fresh for 35 d,and the weight loss,firmness,soluble solids content(TSS) and respiration rate were retained compared with storage in regular air.Among these films,SY film was the best that could keep the storage quality better,and W film was the last one.
