摘要
综述国内外冷杀菌技术在水产品贮藏加工中的应用进展,主要介绍超高压杀菌、臭氧杀菌、高压脉冲电场杀菌、辐照杀菌、脉冲强光杀菌、微波杀菌、生物杀菌等技术的作用原理、优缺点及其在水产品贮藏加工的应用,简要分析冷杀菌技术的发展趋势,旨在为冷杀菌在水产品贮藏加工中的推广应用及提高水产品安全和保持水产品营养的研究提供借鉴。
Application progress of cold sterilization in the storage and processing of aquatic products was reviewed in this paper.The principles,advantages and disadvantages,and application of several cold sterilization technologies in the storage and processing of aquatic products,such as ultra high pressure technology,ozone sterilization,high voltage pulsed electric fields sterilization,irradiation sterilization,pulsed light sterilization,microwave sterilization,and biology sterilization were introduced.Finally,the prospects of cold sterilization were briefly discussed.The article is hoped to offer beneficial reference for the wider application of cold sterilization and provide some suggestion for the study of quality and safety of aquatic products.
