摘要
高压脉冲电场用于食品的非热杀菌具有时间短、能耗低、能有效保存食品营养成分和天然色、香、味特征 ,具有重要的工业化应用前途。从处理系统设计、灭菌机理、处理效果、影响因素、工业化应用等方面对其工业化应用前景做了探讨。
The characteristics of HPEF steri lization were introduced and the industrialization prospect of HPEF sterilization was discussed from the aspects of treatment system design,pasteurization mechanism,energy consumption and economics,treatment effects,affecting factors and present problems.
