摘要
中国白酒酿造史留下了极其丰富而宝贵的古代酒文献。但由于不同专家解读不同,从先秦至唐五代的许多古籍被用于诠释中国白酒的起源,因而出现了中国白酒起源先秦说、两汉说、魏晋南北朝说、唐说等观点。笔者总结了这些古代文献,并辨别其中真伪,进一步得出结论:宋以前的文献基本上是白酒起源的疑似文献,唐文献反映中国白酒起源的确凿证据也不足,但充分表现唐人用蒸馏器、蒸馏工艺取药、取花露、取汞炼丹的认识,为白酒起源提供了可能。
There is a plenty of precious ancient documents about liquor-making. However, experts dispute on liquor origin due to different explanation of these documents, and liquor may possibly originate from Qin Dynasty, or Han Dynasty, or Jin Dynasty, or Tang Dynasty. The author believed that the historical documents about liquor-making prior to Song Dynastry could not provide solid evidences for clear explanation of liquor origin. The historical documents about liquor-making in Tang Dynastry could fully express people's understanding of distiller, distilling techniques, and alchemy but not provide solid evidence for liquor origin.
