摘要
各点居民膳食硒的主要来源为植物性食品,其中谷类食品占有极为重要的地位,就食物平均含硒量(μg/g)而论,高硒点谷物中玉米大于大米,前者均值为1.40,后者为1.07,但糯米高达1.46,其原因不明。高硒点黄豆达2.64,为低硒点黄豆的20倍。高硒点蔬菜达0.980,为低硒点的70倍,在一定膳食结构下,如荒年时,蔬菜硒可能是造成中毒的一项重要膳食硒来源。动物性食物中腊肉为2.44,均为鲜肉的两倍,说明在腌制过程中受到煤烟中硒的污染。
Plant feeds invariably provides the main dietary Se sources,in which
grains are dominant,for inhabitants in the sites chosen.According to the a-
veraged Se content(μg/g)of foods analysed,corn is higher than that of
rice in the high Se site and they are 1.40 and 1.07 respectively.However,
the glutinous rice reached as high as 1.46 and the reason remains not clear.
In the high Se site,soybean and vegetables mounted to 2.64 and 0.980
which are around 20 and 70 times respectively as high as those in the low
Se site.Among animal foods,smoked pork reached 2.44 in the high Se
site,which is two times as high as that of fresh meat indicating heavy
contamination from Se-rich coal smoke during the smoking process.
