摘要
介绍近红外光谱分析技术的基本原理、分析步骤、技术优势,重点阐述近红外光谱分析技术在白酒及其原料、发酵过程中酒醅成分、白酒总酸总酯以及白酒的等级、年份的应用现状,并展望其在白酒行业中的应用前景。
The basic principles,analysis procedures,and technical advantages of near infrared spectroscopy were introduced in this paper.Its application in the anlaysis of liquor raw materials,the components of fermented grains in fermenting process,total acids and total esters in liquor,liquor quality grades,liquor age were elaborated.And its application prospects in liquor-making industry was described.
