摘要
本文对水酶法提取油菜籽油工艺中所使用的酶进行了筛选,同时对所选择的酶制剂进行了酶促动力学研究。结果表明:在纤维素酶,果胶酶,中性蛋白酶,提取酶(复合酶)这四种酶中,中性蛋白酶提取效果最佳,其最适使用条件为:温度50℃,pH 7.5,时间4 h,加酶量1.0%,底物浓度(料水比)1:4。在此条件下,菜籽油的一次提取率可达到85%。
The enzymes were screened for extraction of rapeseed oil with aqueous enzymatic method.The enzyme kinetics was also studied with the selected enzymes.The result showed that the effect of neutral protease was the best catalyst,compared to cellulose,pectinase,and enzyme complex.The optimum conditions were: temperature 50 ℃,pH 7.5,4 hours,enzyme dosage 1.0‰,and substrate concentration 1:4.In these conditions the rapeseed oil yield would reach to 85%.
