摘要
食品抗氧化剂是食品添加剂的重要组成部分,天然植物源食品抗氧化剂则是食品抗氧化剂的主要发展方向。本文介绍了植物源食品抗氧化剂筛选原则,分析了几种常用抗氧化能力筛选方法的优缺点,指出植物源天然抗氧化剂的研发趋势,为开发、利用天然食品抗氧化剂提供参考。
Food antioxidants are one of the main ingredients of food additives, and natural plant antioxidants are the future trend for development of food antioxidants. The selection of natural plant antioxidants, advantages and disadvantages of several screening methods, and development trends analysis of natural plant antioxidants were summarized in this paper, with the purpose of providing some information and reference for the development and utilization of natural plant antioxidants.
