摘要
综述了近年膳食纤维降脂作用及其机制的研究进展。膳食纤维能使血清中胆固醇、甘油三酯、低密度脂蛋白水平降低,高密度脂蛋白水平升高。其主要机制为通过减少膳食中胆固醇的吸收、影响机体中胆固醇的代谢、促进胆固醇的排泄等降低血浆中胆固醇水平;通过增加食物在肠道内的过渡时间、延缓胃排空、减缓或降低脂肪的吸收等机制降低血浆中甘油三酯水平。食物中某些物质能与膳食纤维相互作用,互相影响吸收或生理功能。膳食纤维能针对高血脂这个高危因素,通过一系列机制降血脂,有助于预防高脂血症、心血管疾病、脑血管意外等的发病。
A review with 26 references is given on the role of dietary fiber on blood-fat reducing and its mechanism in recent years.Dietary fiber can reduce the level of cholesterol,triglyceride,low-density lipoprotein and elevate reduces the level of high-density lipoprotein in the plasma.The main mechanisms that dietary fiber reduces the level of plasma cholesterol are reducing the absorption of prandial cholesterol,affecting the metabolism of organism cholesterol,facilitating the excretion of cholesterol and so on.In order to reduce the plasma triglyceride level,dietary fiber can increase the transit time of food in the intestinal tract,delay gastric emptying,slow down or reduce the absorption of lipid and so on.Dietary fiber and some substances in food can affect the absorption or physiologic function of each other.Dietary fiber can reduce blood-fat in some mechanisms and contribute to preventing the onset of hyperlipemia,cardiovascular disease and cerebral vascular accident.
