摘要
经沉淀纯化的黄芩提取物对猪油有明显的抗氧化活性。在60℃条件下,加入提取物为0.020%,0.20%和0.50%时,猪油的POV值≤0.15%的时间相应为4、5和6天。黄芩甙经酶解后可能抗氧化能力会明显提高。
The antioxidative activity of purified extractum of scutellaria baicalensis is remarkable in lard.When 0.020 %,0.20 % and 0.50 % adding amount of extractum into lard and 60℃ corresponding within four,five and six day,the peroxide value is lower than 0.15 %.Antioxidative activity of scutellaria baicalensis gluco-side could be increased by enzymolysis.
