本文回顾了国内外啤酒工业的发展,介绍了酒花和β-酸的成分。阐述了β-酸的加工现状和发展趋势,对推动我国啤酒工业的发展有积极的作用。
In this paper, the developments of beer industry in the worid have been reviewed. The constituents of Hop and β - acids have been introduced. The present situation of processing and tendency of development of β - acids have also been described , which will further develop the Chinese beer industry.
